Can anyone walk me though how to setup the dual elevator servos/mixing for this plane using a JR radio (9503)? Thanks

What JR radio specifically?

That's what I fly.
Easy to do.
I don't have my radio in front of me, but you need to go into the model selection menu area, under the sub menu wing type.
In there is the dual mate area. Under Elev it currently says IHN for inhibit, you need to change that to an open channel on your RX. Usually channel 5 (gear) works well. You may have to do to the Device Sel, and under the Gear part change that to Inh so that the radio frees up that channel.
That's basically all you have to do. No mixes. The only other thing you might need is to reverse the channel you used in the normal servo reverse menu if it moves the wrong way. And you can set the travel endpoints also of each channel separately to get them to move the same amount.
The dual rates and expo part will adjust both though.

On the 8FG, we had to select tail type "ailevator".

Curious why you say "had to"? When I set up my 87" Extra I am pretty sure I just added 5 to also be an ELE along with 2 and made sure the trim was the same assigned between the two and I had to reverse 5 and that works with independent servo trim matching yet respond to the single transmitter trim for Elevator. I got this from the Futaba training videos on YouTube and it worked so I stayed with it. I will have to look into ailevator in case I am missing out on something.

Follow up

I tried setting up a new plane using the ailevator and it basically works the same except it selected 7 as a mate to 2 and automatically reversed it. I noticed something else that I forgot and have no answer why, why does it also set up two throttle servos. Beside 3 it adds 8 as well in the same direction.

"Had to" was a poor choice of words on my part. I should have simply said "that's what we did and it worked and we stopped there". The gentleman I was helping is well into his 70s and and isn't very comfortable programming anything. As a relative club youngster at 50 years old, I'm sometimes looked to for button pushing assistance. :D If I find a method that works I don't usually explore alternatives.

I actually fly a DX8 so my knowledge of other radios is limited to what few features I have helped with.

In the Daniel video at 3:15-3:19 what is the name of that move. It looks like he is spinning around the wingtip as the pivot point. I seen other videos of people doing this move, but I just don't know the name or how it's done.
 
I got 3 flights on mine this Saturday. We had to fly off a frozen lake facing the sun, but that is life in the Shire.

This airplane is so freaking stable, it never scared my out of practice fingers.

I almost tried the 21x10 on her. Just plain ran out of time before work.

Do it! I am still running the Mej 21x10 and am liking the speed, but yet still plenty of power. I remove the SFGs and can get a decent poptop out of it with the extra momentum. We have had crappy weather here, too. I cannot wait to get some time back on the 78.
 
We talked about moving to socal a few years ago before buying this house. Even though you get wonderful weather, our quality of life would be much lower living out there making less money and paying twice as much in housing and probably triple in taxes.

The 21x10 I have is a PT, which is supposed to be similar to Falcon. Falcon does not currently make a 21x10. I hope to get to fly it before I goto Toledo, as I could pick up a Mejzlik from DA when I am there if I am not happy with this prop.

I got a single spin pop top with the 21x8 and SFGs on it, but nothing like some of my other planes. I will use my Vess 20B on my 74 Edge with the twin for break in.

It will be interesting once Darren and I can get together and do some sort of dual flight with our two setups. I will beat him out of a hover, but he smokes me at the top end of the power curve with that pipe.
