What's the best glue to use for putting a wooden plane back together? I was going to use epoxy.
It really depends on how bad it is, honestly....  IIf it isn't all that bad, I use just plain ole regular super glue.  If you have the time to wait, Elmers wood glue.  I've used epoxy on firewalls and LG plates.  BBut never anywhere else.  Foam core wings get Gorilla Glue, due to the expanding nature of it.

I have to replace both outside wood formers.I have never did this big of a repair before. Looks like prc used some kind of white glue.

If you're replacing broken parts and the repair allows for it, Gorilla Glue does a great job of filling little gaps and cracks.  Depending on the actual repair, you need to clamp the pieces together if possible, or the expanding glue can force things apart.  If you don't have the ability to clamp, then 30 minute epoxy or thick CA or good old wood glue could stick things together pretty dependably
