As for servo torque, I think it's that today where everything is very accessible and not that expensive we can go with a wide and different servo brands that can fit our power to budget ratio, that being said, we forget sometimes that when we use 1" servo arm it will be as the manufacturer state but every 0.1" you add to the arm you loos power and speed.
My method is the "how much the plane weigh"
Each Ail will get 1.5 times the planes weight, Elevator 1 time of the weigh
Rudd twice.
