Need more info when you say de-construct you do mean rip it apart so that every part can be measured so that a drawing can be made of every part, and then an assembly drawings from the detailed parts.

A good reference I can give is this. There have been a handful of planes I originally designed and drew on paper by hand before I had CAD. I have converted most to CAD at this point and it takes me about 30 hours per plane to do and that's just slowly taking measurements and transferring it to CAD. So taking a plane apart to work from parts I would imagine would take quite a bit longer to do.
 
I'm really thinking about learning CAD. So much of our sport is going away. A lot of planes I enjoy flying are no more, so finding a ways to keep building my favorites might be the way to go.
